Soapstone is relatively soft because of its high talc content (talc being "1" on the Mohs hardness scale and granite being "7") and may feel soapy when touched, hence the name.
Soapstone naturally forms a patina over time, similar to the oxidization process that occurs with other materials like copper. A weathered or aged appearance will occur naturally as the patina is enhanced with food-grade mineral oil, or simply left to age by exposure to air and use.
